Curried Chicken Salad Recipe

Here, by popular demand. It’s true. This  recipe was sent to me by the mom of Keziah and Boaz’s little brother, Hilton. Hilton loves this recipe and thought his brother and sister would too. I served it at our Solid Rock Family Camp, and have been hounded for the recipe every since :)  And since I don’t have a photo of Hilton handy, or a photo of my chicken salad, here’s Boaz instead.

Curried Chicken Salad

Saute chopped peanuts in a bit of butter with a sprinkle of sugar. Let cool.

Take cooked chicken breast (canned will work) shred or chop into small pieces.

Add mayo, salt, pepper and a couple of shakes of curry.

Add chopped green onions or a few sprinkles of onion powder.

Once the nut mixture is cool, add to chicken.

Throw in a handful of chopped grapes.

Serve in pita bread or on fresh bagels. This stuff is so good. Delicious, with just  a hint of exotic flavor from the curry.
